Here is the Pumpkin Eater Doughnuts Recipe I promised you. Br sure you don't tell the kids these doughtnuts have healthy stuff in them!
Pumpkin Eater Doughnuts
2T. shortening 3/4 c. sugar
2 eggs 1 c. pumpkin
1 c. shredded Bran Cereal 2 3/4 c. flour
2t. baking powder 1 t. pumpkin pie spice
1/2 t. salt oil for frying
cinnamon/sugar mixture to roll doughnuts in
Beat shortening and sugar till fluffy. Beat in eggs one at a time. Stir in pumpkin, then cereal. Let mixture stand for 2 minutes so cereal will soften. Sift dry ingedients together. Stir into pumpkin mixture. Cover and chill for 1 hour or until dough is stiff enough to handle. Roll 1/2 inch thick on lightly floured board. Cut using cookie cutter or a glass. Fry in heated oil till golgen brown. Drain on paper towels. Roll in cinnamon/sugar mixture till coated. Makes 2 dozen.
