CHOCOLATE BROWNIE MUFFINS
2 c. all purpose flour
1/2 wheat flour
3/4 c. unsweetened cocoa
2T. baking powder
3/4 t. salt
1 heaping c. milk chocolate chips
1 2/3 c buttermilk
1 1/4 c. granulated sugar
3/4 c. plus 1T canola oil
3 large eggs
Preheat oven to 350 degrees. Spray muffin pans with cooking spray.
In a bowl, mix flours, cocoa, baking pdr., salt and chocolate chips. Mix till thoroughly combined.
Combine buttermilk, sugar, oil and eggs in a large bowl. Mix well.
Add dry ingredients to wet and combine thoroughly, but do not over mix.
Using a 2 oz. scoop, scoop muffin mixture into muffin pans. Bake for 15 minutes or until a toothpick inserted in center comes out clean.
Makes about 2 dozen muffins.
